黄曲霉毒素是真菌毒素中毒性最强的一类可致癌、畸形突变生物毒素,其毒性组分最主要是由曲霉属,特别是黄曲霉、寄生曲霉产生的次生代谢产物.黄曲霉毒素产生菌在一定的温度、湿度条件下,可污染储藏的谷物和熟食制品,如奶酪等,除了防控黄曲霉毒素产生菌进入食物链外,开发快速、灵敏的产毒菌株检测方法,用于食品原料和加工过程中的检验也可避免黄曲霉素污染风险.为了达到快速鉴别可能产生黄曲霉毒素的菌株,及时控制产毒微生物危害的目的,本研究以黄曲霉毒素合成基因簇中的关键调控基因aflR为研究对象,基于aflR基因采用PCR-RFLP的方法对可能产生黄曲霉毒素的菌株进行了鉴别分析研究.
Aflatoxins are among the most toxic mycotoxins。These toxic compounds are potent carcinogenic and mutagenic secondary metabolites produced by the Aspergillus genus,especially Aspergillus flavus and Aspergillus parasiticus。A relevant fungal population grows on the surface of ripened foods and cereals during the process of storage when temperatures and moisture is appropriate。。It is important to prevent aflatoxins production enter the food chain。In addition,rapid and accurate methods to quantify aflatoxin-producing molds in raw materials,pre-processed and prepared foods are necessary to take appropriate corrective measures which avoid risk of aflatoxins production。In order to identify quickly strains that may produce aflatoxin and control the detriment of toxin-producing microorganism in time,the regulation gene aflR of aflatoxin synthesis gene cluster was researched by PCR-RFLP technology for potential strains producing aflatoxin。
