中文摘要：γ-氨基丁酸在哺乳动物中枢神经系统中作为抑制性神经递质起作用,具有抗心律失常、改善大脑血液循环、降血压、改善高脂血症、防止肥胖等作用.目前主要通过使糙米发芽的方法富集γ-氨基丁酸,大米可以作为主食食用,因此发芽糙米的研究和推广对国民健康水平的提高意义重大.目前发芽糙米的研究集中在γ-氨基丁酸生产机理及富集条件的研究,以得到γ-氨基丁酸含量高且品质优良的发芽糙米,而发芽过程中由于呼吸代谢、溶解等作用造成的干物质损失的研究还未见报道,本课题主要对水浸渍法生产发芽糙米时干物质的损失情况及影响因素进行了初步探讨.

外文摘要：Inhibitory neurotransmitter γ-aminobutyrate acid (GABA) in mammal central nervous system has the effect of antiarrhythmic，improving cerebral blood circulation，decreasing blood pressure，improving hyperlipidemia and preventing obesity。At present，the main method of Enrichment of GABA was brown rice germination。Rice as one of the staple food for human。Therefore，research and develop of germinated brown rice was of significant to improve human health level。To obtain germinated brown rice with high GABA content and good quality，recent research mainly focused on the production mechanism and enrichment methods，however，dry matter loss due to the respiratory and dissolution has not been reported till now。In view of this，lose rate of dry matter and influence factors in germinated brown rice by soaking methods were studied in this paper。
