黑松露含有丰富的蛋白质、多糖和微量元素,其中,黑松露多糖在保健中发挥了重要的功效,具有抗氧化、降血糖、抗炎等作用.综述了黑松露多糖的主要提取和纯化方法.
Abstract
Black truffle contains rich protein,polysaccharide and trace elements,among which,black truffle polysaccha-ride plays an important role in health care with antioxidant,hypoglycemic,anti-inflammatory and other functions.In this paper,the main extraction and purification methods of black truffle polysaccharide were reviewed.
