Evaluation of antioxidant activity in fermented blueberry wine of different varieties
To evaluate the antioxidant activity in fermented blueberry wine of different varieties,eight different varieties of blueberry fruits including Baldwin,Brightwell,Tifblue,Premier,Bluerain,Climax,Gardenblue and Powderblue were used to brew blueberry wine.The correlation between the antioxidant activity and polyphenols,flavonoids in different varieties of blueberry fruit and blueberry wine was analyzed.The results showed that the contents of polyphenols and flavonoids of Gardenblue blueberry fruit and wine were the highest,and the clearance rates of 1,1-diphenyl-2-trinitrophenylhydrazine(DPPH)and 2,2-diazo-di-3-ethylbenzodihydrothiazolin-6-sulfonic acid(ABTS)were the highest.The contents of total phenols and flavonoids in blueberry wine were positively correlated with the clearance rates of DPPH and ABTS(P<0.01).Total phenols and flavonoids can be used as important components to evaluate the antioxidant capacity of blueberry wine.
