Analysis of Polyunsaturated Fatty Acids in Rich DHA Egg Yolks by GC-MS
A detection method by GC-MS for the kinds and contents of fatty acids in rich DHA egg yolks has been established.Fatty oils were extracted from egg yolks by Soxhlet extraction method and Bligh Dyer extrac-tion method,were methyl esterificated with KOH-CH3OH and were analyzed and determined by gas chromatog-raphy-mass spectrometry.The results showed that the kinds and relative percentage contents of fatty acids in egg yolks were different.5 kinds of polyunsaturated fatty acids were detected by Soxhlet extraction method,with a relative percentage content of 8.94%;6 kinds of polyunsaturated fatty acids were detected by Bligh Dyer ex-traction method,with a relative percentage content of 14.28%.
