随着人们对健康生活理念的不断践行,天然色素越来越受到消费市场欢迎.桑椹花青素(anthocyani-din)是一种水溶性黄酮类化合物,不仅属于天然优质食用色素,而且对人体具有抗氧化、抗肿瘤、保护视力和肝脏、预防心血管疾病等多种生理保健功能,是具有极好开发利用前景的桑树活性物质之一.本文对植物花青素的研究概况,桑椹花青素的种类与生物合成及其调控机制、影响桑椹花青素形成及含量的因素、不同国家分布桑品种的桑椹花青素含量等研究进行总结,有助于进一步研究桑椹花青素的生物活性功能,推动其高值化、规模化开发利用.
Review of Mulberry Anthocyanins
As awareness of healthy lifestyles grows,a burgeoning market demand for natural pigments is rising.Mulberry anthocyanins are water-soluble flavonoids that not only renowned for natural high-qual-ity edible pigments,but also have diverse health properties,including antioxidant,anti-tumor,protecting vision and liver,and preventing cardiovascular disease,which is one of the active substances in mulberry trees with excellent development and utilization prospects.This article aims to comprehensively elucidate research overview of plant anthocyanins,mulberry anthocyanins'taxonomy,biosynthesis and regulations,influential factors affecting the formation and content,and anthocyanins varies from mulberry varieties distributed in different countries,setting a foundation for future studies underpinning mulberry anthocya-nins and promoting its high-value and large-scale development and utilization.
