Effects of hot air-assisted microwave drying on drying quality and efficiency of Momordica charantia L.
In order to study the impact of auxiliary microwave drying factors such as hot air temperature,microwave power and hot air velocity on the quality and efficiency of Momordica charantia L.drying,this research utilized indicators such as a* value of Momordica charantia L.,water activity,chlorophyll content,and drying rate.A single factor experiment was conducted to analyze the influence of these factors on the quality and drying efficiency of Momordica charantia L.,and to determine their ranges.Based on this,a quadratic orthogonal rotation combination test was used to establish a polynomial regression model predicting the quality and drying efficiency of Momordica charantia L.The results showed that the R2 values of the four indicators were 0.905 5,0.917 0,0.893 9,and 0.980 5,respectively,all greater than 0.890 0,indicating a high degree of fit for the regression model,which could effectively predict the quality and drying efficiency of Momordica charantia L.Using response surface method,the optimal drying factors for hot air-assisted microwave drying of Momordica charantia L.were:microwave power of 900 W,hot air temperature of 60℃,and hot air velocity of 20 m·s-1.This research provided theoretical guidance and technical support for improving the quality and efficiency of Momordica charantia L.drying,thereby would promote the commercial development of Momordica charantia L.drying.
