我国肉类产品全冷链物流技术研究进展

我国作为肉品消费大国,对肉品的全冷链物流技术的研究是至关重要的,冷链技术不仅可以有效的维持肉品的新鲜度、质构、色泽、风味等营养品质,还可以减少资源浪费,符合市场需求.本文通过梳理肉品冷链过程中的主要技术建设,即冷链肉品灭菌技术、冷链肉品加工技术、冷链肉品保鲜技术、冷链肉品运输和配送技术5个方面对肉品品质的保鲜影响作用,综述了我国肉品全冷链物流技术发展现状与问题,以期加快我国冷链物流技术的发展及应用推广.
Research Progress of Meat Products Cold Chain Logistics Technology in China
As a meat consuming country,the research on the full cold chain logistics technology of meat is crucial in China.Cold chain technology can not only effectively maintain the freshness,texture,color,flavor and other nutritional qualities of meat,but also reduce the waste of resources and meet the market demand.This article summarizes the current situation and problems in the development of meat cold chain logistics technology in China by sorting out the main technical construction in the process of meat cold chain,i.e.,the role of cold chain meat sterilization technology,cold chain meat processing technology,cold chain meat preservation technology,cold chain meat transportation and distribution technology in the five aspects of the preservation of meat quality,with a view to accelerating the development of Chinese cold chain logistics technology and the application of its promotion.
