本文旨在为异味冰净化效果评价提供科学参考,通过电子鼻和电子舌结合人感评的方式研究净味功能模块对冰块异味的去除效果,电子鼻和电子舌可以将不同处理的冰块明显区分,同时分析结果与人感评结果一致.不同净化处理方式的冰块在气味和滋味特征存在差异,通过电子鼻和电子舌分析技术相结合的手段,可以较好地分析冰块异味程度,为冰块异味去除提供一种有效的评价方法.
Evaluation of the Effect of Electronic Nose and Electronic Tongue on Odor Removal of Ice Cubes
This article aims to provide scientific reference for the evaluation of the purification effect of odor in ice.The removal effect of the deodorization function module on the odor of ice cubes was studied by combining electronic nose and electronic tongue with human sensory evaluation.The electronic nose and electronic tongue can clearly distinguish ice cubes that have been treated differently,and the analysis results are consistent with the human sensory evaluation results.There are differences in the odor and taste characteristics of ice cubes treated with different purification methods.By combining the analysis techniques of electronic nose and electronic tongue,the degree of odor in ice cubes can be analyzed effectively,providing an effective evaluation method for the removal of odor in ice cubes.
