摘要
随着我国经济的飞速增长,居民对生活品质的要求日益提高.作为酒类的消费大国,我国葡萄酒需求不仅呈现量的激增,对酒的品质也更加苛刻.因此,对于酒柜储藏技术的研究是不可或缺的.现今酒柜不仅可以在一定时间内减缓酒的老化,维持葡萄酒的品质和风味,给予用户良好的用酒体验,还可以延长葡萄酒的货架期,减少生产企业的损失.本文从酒柜制冷技术、恒温保湿技术、催陈技术以及智能化等四个方面开展调研,整理分析了国内外相关文献,旨在为今后的研究提供参考.
Abstract
With the rapid growth of China's economy,residents are increasingly demanding on the quality of life.As a large consumer of alcohol,the demand for wine in China not only shows a surge in quantity,but also more demanding on the quality of wine.Therefore,the research of wine cabinet storage technology is indispensable.Nowadays,wine cabinet can not only slow down the aging of wine and maintain the quality of wine within a certain period of time,but also maintain or even enhance the flavor of wine,giving users a good experience.In this paper,we carry out research from four aspects of wine cabinet refrigeration technology,constant temperature and humidity technology,aging technology and intelligentization,and collate and analyze relevant literature at home and abroad,aiming to provide reference for future research.
