关于挡火板对烤炉烹饪温度影响的探究与优化

户外燃气烤炉是国外普遍使用的烹饪器具,我国每年出口大量的户外燃气烤炉.由于燃气烤炉工作时可以使食物快速升温,发生美拉德反应,故其烹饪的食物口感鲜嫩,除了含有多种风味物质外,还具有独特的烟火香味.美拉德反应是否充分,是判定一台烤炉产品烹饪性能优劣的重要依据.本文通过仿真手段和实验室测试,对某款户外燃气烤炉在不同挡火板方案下工作时的炉内温度场进行探究,最后揭示了挡火板形状对炉内温度影响的规律.
Exploration and Optimization of Burner Tent on Cooking Temperatures of Outdoor Gas Grill
Outdoor gas grills are widely used cooking appliances abroad,and China exports a large number of outdoor gas grills annually. These grills rapidly heat food,triggering the Maillard reaction,resulting in tender taste,in addition to containing a variety of flavor and substances,it also has a unique special smoky flavor. Whether the Maillard reaction is thorough is an important criterion for assessing the cooking performance of a grill product. This article uses simulation and laboratory tests to explore the temperature field inside a gas BBQ grill when it works under different burner tent,the conclusion reveals the influence patterns of burner tent's shape on the internal temperature of the grill.
