仿生乳脂球乳液的性质及体外模拟消化

选用富含脂肪球膜(MFGM)成分的Himlar7500乳清蛋白粉,使用大豆油制备了一种与母乳脂肪球结构相似的模型水包油乳液。贮藏实验和模拟体外消化实验比较了婴儿配方奶粉、母乳与制备乳液的氧化稳定性和消化差异。通过对粒径分布相似度比较,筛选出4%的MFGM材料、剪切速率12 000 r/min、均质压力35 MPa下和40%大豆油制备的水包油乳液,粒径呈双峰分布,与母乳粒径分布相似。60 ℃贮藏实验中,制备的乳液初始电位-39。36 mV,12 d后仍为-35。60 mV,变化程度小于母乳和奶粉。12 d内,粒径、过氧化物和硫代巴比妥酸值变化较小,均证明该乳液具有良好的氧化稳定性。在消化实验中,乳液的脂肪酸释放率为61。53%,虽然低于母乳(78。56%),但与奶粉(66。09%)无显著差异,并且表现出与母乳类似的脂肪酸释放规律,证明该模型乳液与母乳有很好的结构相似性。
The mimicking human fat globule structure emulsion and its applications in vitro digestion
Himlar7500 whey protein powder rich in fat globular membrane(MFGM)was used to prepare a model oil in water lotion with a structure similar to that of breast milk fat globules using soybean oil.The oxidation stability and digestion difference of infant formula,breast milk and prepared lotion were compared in storage experiment and simulated in vitro digestion experiment.Compared the similarities between the particle size distribution and that of breast milk,it was found that the particle size distribution of the oil-in-water lotion prepared by 4%MFGM,shear rate of 12 000 r/min,homogenization pressure of 35 MPa and 40%soybean oil showed a bimodal distribution,which was similar to that of breast milk.In the storage experiment at 60 ℃,the initial potential of the prepared lotion was-39.36 mV and remained-35.60 mV after 12 d,with less change than that of breast milk and infant formula.Within 12 d,the particle size,POV content and TBARS content changed slightly,which proved that the lotion was with good oxidation stability.In the digestion experiment,the fatty acid releasing rate of lotion was 61.53%,which was lower than that of breast milk(78.56%),but had no significant differences between that of milk powder(66.09%).It showed a similar fatty acid release pattern with that of breast milk,which proved that the model lotion had good structural similarity with breast milk.
