摘要

硒是生命体必需的一种微量元素,其摄取量不足或过量均可能引起一系列的营养问题,甚至诱发疾病.生命体自身无法合成硒,只能通过"土壤-农作物-食物-生命体"过程获取.介绍了有益元素硒,综述了作物富硒的影响因素以及常见的作物富硒技术,并展望了硒营养的未来发展趋势.

Abstract

Selenium is an essential trace element for living organisms,and the insufficient or excessive intake may cause a series of nutritional problems and even induce diseases.Living organisms are unable to synthesize selenium independently and can only obtain selenium through the process of"soil-crop-food-living organisms".The beneficial element selenium is introduced,the influencing factors of crop selenium enrichment and common crop selenium enrichment technologies are summarized,the future development trend of selenium nutrition is prospected.
