食品真实性引起的食品安全、经济利益、消费者权益等问题逐渐成为全球关注热点.传统的食品真实性鉴别技术存在高损耗检测、操作方法繁琐、预处理要求高等问题,难以满足现实的要求.拉曼光谱技术是一种灵敏度高、前处理简便、实用性强的无损或低损耗检测方法,在食品真实性鉴别中具有很好的应用前景.本文概述了食品真实性鉴伪中的拉曼光谱技术,重点综述了拉曼光谱技术在肉类、海产品及其制品、乳制品、食用油、蜂蜜和谷物制品中的应用,并对拉曼光谱技术在食品真实性鉴别领域的发展进行总结和展望,以期促进拉曼光谱技术在食品真实性鉴别方面的应用.
Research progress of Raman spectroscopy in authenticity identification of food
Issues such as food safety,economic benefits,and consumer rights caused by food authenticity have gradually become a global focus.Traditional food authenticity identification techniques have problems such as high loss detection,cumbersome operation methods,and high preprocessing requirements,which are difficult to meet practical requirements.Raman spectroscopy is a non-destructive or low-loss detection method with high sensitivity,simple preprocessing,and strong practicality,which has a good application prospect in the identification of food authenticity.This article summarizes the Raman spectroscopy technology in food authenticity identification,focusing on the application of Raman spectroscopy technology in meat,seafood and their products,dairy products,edible oils,honey,and cereal products.It also summarizes and prospects the development of Raman spectroscopy technology in the field of food authenticity identification,with a view to promoting the application of Raman spectroscopy technology in food authenticity identification.
