不同瓶装饮用水水质比较及体外抗氧化能力研究

为助力饮用水产业发展提升全民健康,本试验采用感官分析法(综合评分法、百分制法、模糊数学评价法)、理化分析法(火焰原子吸收分光光度法、离子色谱法等)和自由基清除测定法(DPPH法、羟自由基清除法、超氧自由基清除法)对8种不同品牌瓶装饮用水进行水质比较和体外抗氧化能力研究.结果显示,8种不同品牌瓶装饮用水均符合国家生活饮用水水质要求,在多种方法的综合测评下,各品牌瓶装饮用水表现出差异性:(1)在三种感官分析法中,农夫山泉天然饮用水均有突出表现,而其他品牌瓶装饮用水则因为外观包装、滋味口感等因素表现略有起伏;(2)通过理化分析法发现,百岁山饮用天然矿泉水、恒大冰泉天然矿泉水和农夫山泉天然饮用水富含钾钙钠镁等矿质元素,长期饮用可能更利于身体健康:(3)根据体外抗氧化能力比较的结果显示,农夫山泉饮用天然水表现出较强的抑制羟自由基能力和抗超氧阴离子能力,具有较强抗氧化活性.
Comparison of Water Quality and in vitro Antioxidant Capacity of Different Bottled Drinking Water
In order to assist the development of drinking water industry development and improve national health,it was researched of water quality comparison and antioxidant capacity in vitro of eight different brands bottled drinking water by the methods of sensory analysis(comprehensive scoring method,percentage method,fuzzy mathematics evaluation method),physical-chemical analysis(flame atomic absorption spectrophotometry,ion chromatography,etc.)and free radical scavenging assay(DPPH method,hydroxyl radical scavenging method,superoxide radical scavenging method).The results showed that eight different brands of bottled drinking water were in line with the national drinking water quality requirements.While under the comprehensive evaluation of a variety of methods,each brand of bottled drinking water showed differences:(l)In the three sensory analysis method,Nongfu Spring natural drinking water had outstanding performance.However,bottled drinking water of other brands fluctuated slightly due to factors such as appearance,packaging,taste and so on.(2)Through physical and chemical analysis,it was found that the natural mineral water of Baisui Mountain,Evergrande Ice Spring and Nongfu Spring were rich in mineral elements such as potassium,calcium,sodium and magnesium.Long-term drinking might be more beneficial to health.(3)According to the comparison of antioxidant capacity in vitro,the natural drinking water of Nongfu Spring had a strong ability to inhibit hydroxyl free radicals and resist superoxide anion,and had a strong antioxidant activity.
