The identification of Baijiu is very important for the healthy development of Baijiu industry and the protection of consumers'rights and interests.The traditional identification methods of Baijiu are mainly based on the subjective judgment of connoisseur or anti-counterfeiting marks,and there are many uncertainties in the identification results.Modern analytical technology provides a powerful technical guarantee for scientific and accurate identification of Baijiu.In this paper,we review the latest achievements of modern analytical techniques in the identification of Baijiu,and summarize the advantages and disadvantages of different techniques,and discusse the potential opportunities and challenges of modern analytical techniques in the identification of Baijiu,providing a reference for the identification of Baijiu.
