果实发育和成熟过程中糖信号的研究进展

糖对果实的生长、发育及果实品质提升至关重要,其含量、种类和比例决定水果的甜度和风味,进而影响消费者对水果的接受程度。糖不仅是植物的碳源和能量来源,还作为信号分子参与调控果实生长过程中的胚胎形成、种子萌发、果实营养生长及生殖生长等。果实中的可溶性糖主要以蔗糖、果糖、葡萄糖和山梨醇为主,不溶性糖主要为淀粉。果实发育和成熟过程中糖的合成、运输、代谢和含量变化,受酶、基因、转录因子、转运蛋白、激素以及环境条件的影响。调节果实发育和成熟过程中糖代谢的植物激素主要为脱落酸(Abscisic acid,ABA)、生长素、乙烯(Ethylene,ETH)、赤霉素(Gibberellins,GA)、油菜素内酯(Brassinosteroids,BR)、水杨酸(Salicylic acid,SA)、茉莉酸(Jasmonic acid,JA)和褪黑素(Melatonin,MT)等。果实颜色是果实品质的关键特征之一,对水果的营养价值和商业价值至关重要,主要受花青素、类胡萝卜素积累或叶绿素降解的影响;糖代谢与花青素、类胡萝卜素合成之间存在复杂的关系。该文综述了糖代谢及其信号转导在果实发育和成熟过程中的作用,并介绍糖信号转导机制与激素、色素的调控关系,可为水果果实品质改变和采后贮藏保鲜研究以及果实生长发育过程中糖代谢相关研究提供一定的理论依据。
Research Progress on Sugar Signaling during Fruit Development and Ripening
Sugar is extremely important for the growth and development of fruits,and it is also vital for the improvement of fruit quality.In addition,its content,species,and proportion determine the sweetness and flavor of fruits,which in turn affect the acceptance of fruits by consumers.Sugar is not only the carbon source and energy source of plants,but also acts as the signal molecule involved in the regulation of embryo formation,seed germination,fruit vegetative growth and reproductive growth during fruit growth.The soluble sugars in fruit are mainly sucrose,fructose,glucose and sorbitol,while the insoluble sugar is mainly starch.The changes of sugar synthesis,transport,metabolism and content during fruit development and ripening are affected by enzymes,genes,transcription factors,transporters,phytohormones and environmental conditions.Among them,phytohormones that regulate sugar metabolism during fruit development and ripening mainly include abscisic acid(ABA),auxin,ethylene(ETH),gibberellins(GA),brassinosteroids(BR),salicylic acid(SA),jasmonic acid(JA)and melatonin(MT),etc.In addition,fruit color is one of the key characteristics of fruit quality,which is crucial to the nutritional and commercial value of fruits,and is mainly affected by anthocyanin and carotenoid accumulation or chlorophyll degradation.Meanwhile,there is a complex relationship between sugar metabolism and the synthesis of anthocyanins and carotenoids.In this study,it reviews the role of sugar metabolism and its signal transduction mechanism during fruit development and ripening,and introduces the relationship between sugar signal transduction mechanism and the regulation of hormones and pigments,to provide important theoretical basis for fruit quality change and postharvest storage.Furthermore,the future research direction is prospected in order to promote the related researches in the field of sugar metabolism during fruit growth and development.
