适合白酒酿造工程专业的微生物学课程体系建设探索

微生物学相关知识体系是白酒酿造工程专业人才应掌握的核心理论体系,同时也是提出、分析并解决生产实际问题的先决条件.目前现有的微生物学课程体系及教学内容无法适应本专业人才的培养目标和要求,需要对此做适当改革和重建.该文基于白酒企业在生产工艺和工程问题方面的解决与创新,合理定位与此衔接的理论背景,确定相关理论所在的课程及内容,进而构建出以微生物学为核心,3 门强化基础课程和 3 门拔高创新课程为辅助的微生物相关课程体系,并通过与此相适应的教学方法和手段达到培养本专业人才的目的.在国内全面开展工科课程体系改革背景下,期望文中的课程体系及构建思路对国内其他开设酿酒类专业高校有所参考.
The microbiology related knowledge is a core theoretical system which should be grasped by the talent expert in Chinese baijiu brewing engineer,and also is an essential prerequisite for them to raise,analyze,and resolve the practical problems of production.However,the content of courses available could not be appropriated for the talent cultivation.Therefore,innovation and rebuilding to the current curriculum system should be performed.In this paper,we first extracted the theorical points potentially explaining the engineering problems,and then content of courses covering the points were selected.Finally,the new curriculum system was rebuilt from the selected courses and the available teaching methods and means.The new curriculum system was consisted of two parts,one was Microbiology as the core course,the other was co-curriculum covering six courses that aims to enhance foundation and promote innovation of the students.Under the background that innovating engineering curriculum system has been full carried out in domestic universities,it is expected that the exploration of Microbiology curriculum system and the course content reform of the Chinese baijiu brewing engineering major in the paper will have reference value for the construction of related majors in domestic universities.
