Research progress in the synthesis,preparation and application of Endo-β-1,3 glucanase
β-1,3-glucanase is a type of enzyme that is widely found in bacteria,fungi,and certain plants and is capable of hydrolyzing β-glucans to produce glucan of different molecular weights.Low molecular weight glucan possesses unique physiological activities such as antibacterial,antioxidant,immunomodulatory,and antitumor effects,which have shown good prospects for application in many fields such as medicine,food,and the chemical industry.Currently,the methods for producing low molecular weight glucan mainly include physical,chemical and enzymatic degradation.Compared with physical and chemical degradation methods,enzymatic degradation has the advantages of high catalytic efficiency,mild reaction conditions,high yield and environmental friendliness.However,the enzyme activity and stability of β-glucanase currently developed cannot meet the needs of industrial production.Therefore,the development of β-glucanase suitable for industrial production has become the key to overcoming the technical barrier of preparing low molecular weight polysaccharides by degrading high molecular weight glucan.This paper reviews the research progress of the synthesis regulation,characteristics,preparation of Endo-β-1,3-glucanase,including production and process optimization of low molecular weight glucan,The aim is to provide a reference for promoting research and industrial application of Endo-β-1,3-glucanase.
