In this experiment, the plateau characteristic crop Brassica rapa L.was used as the research object, and ethanol was used as the extractant to extract glucosinolates from the Brassica rapa L.The effects of different extraction time, extraction temperature, ethanol concentration and solid-liquid ratio on the extraction of glucosinolates were studied by single factor test, and the extraction conditions were optimized by orthogonal test. The results showed that the optimum conditions for the extraction of glucosi-nolates from the Brassica rapa L.by ethanol extraction were as follows:extraction time was 30 min,ex-traction temperature 90℃,ethanol concentration 70%,solid-liquid ratio 1∶20.Under these condi-tions,the average extraction amount of total glucosinolates reached 34.58 μmol/g.This study not only provides a new idea for the high value utilization of Brassica rapa L.but also provides a theoretical refer-ence for the efficient extraction and quantitative analysis of natural glucosinolates.
