Objective To detect the protective effect and possible mechanism of Guizhou Miao red sour soup on hepatic steatosis and lipid deposition in rats with nonalcoholic fatty liver disease(NAFLD).Methods The content of antioxidants in Guizhou Miao red sour soup was detected according to the National Standard Test.Rats in the Normal group were fed with ordinary foodstuffs and equal volume distilled water,rats in the Model group were fed with high fat foodstuffs and equal volume distilled water,and rats in the red sour soup group were fed with high fat foodstuffs and gavage with 8 g/kg dose of red sour soup.Rat food intake and body weight were recorded daily.After constant gavage for 12 weeks,the body weight of rats was weighed,and the levels of Lees index,liver index,serum lipid,alanine aminotransferase(ALT),and aspartate aminotransferase(AST)were measured,the levels of total antioxidant capability(T-AOC),malondialdehyde(MDA),tumor necrosis factor-α(TNF-α),and interleukin 6(IL-6)were surveyed,and the liver was stained with H&E and oil red O.Results The antioxidant contents such as lycopene,capsaicin and organic acids in Miao red sour soup were rather rich.Compared with the model group,Miao red sour soup group lost weight,Lee's index and Liver index decreased,and the contents of serum triglyceride(TG),total cholesterol(TC)and low density lipoprotein cholesterol(LDL-C)decreased(P<0.05),while the content of high density lipoprotein cholesterol(HDL-C)increased(P<0.05),and the levels of serum ALT and AST decreased(P<0.05).Serum AOC,MDA,TNF-α,and IL-6 decreased(P<0.05),reducing oxidative stress and chronic inflammation.H&E staining and oil red O staining showed that the hepatic steatosis and lipid deposition were prevented.Conclusion Guizhou Miao red sour soup has a certain preventive and therapeutic effect on NAFLD,which may be related to regulating blood lipid disorder,improving liver steatosis and lipid deposition,reducing oxidative stress and chronic inflammation.
