Rice is the main source of energy and protein,in order to enhance the nutritional quality of rice,the authors reviewed the effects of inheritable characters,environmental factors,cultivation measures on rice nutritional quality,and introduced the current status of improving rice nutritional quality through genetic engineering technology.
