乌原鲤肌肉营养成分分析与品质评价

[目的]探明乌原鲤肌肉营养成分,为乌原鲤的健康养殖及种质资源保护利用提供参考.[方法]采集广西武鸣区(WM)、灵山县(LS)和兴宾区(XB)3个地区的乌原鲤,测定分析其肌肉营养成分,并进行营养价值评估.[结果]3组乌原鲤肌肉的粗蛋白和粗脂肪含量分别为 18.68%~19.44%和0.83%~1.21%,LS组的水分和粗脂肪含量显著高于WM和XB.3组乌原鲤共检出氨基酸 16种,其中,谷氨酸(Glu)含量最高,蛋氨酸(Met)含量最低,XB的氨基酸总量(TAA)、必需氨基酸总量(EAA)、非必需氨基酸总量(NEAA)和鲜味氨基酸总量(DAA)均显著高于WM和LS.3组鱼肉的第一、二限制性氨基酸均为蛋氨酸+胱氨酸(Met+Cys)和缬氨酸(Val).除Met和Val外,3组鱼肉的其他氨基酸AAS评分均高于 1,CS评分均高于 0.75,EAAI为 78.54~86.32.3组鱼肉共检测出 29种脂肪酸,XB的C13:0、C15:0、C17:0、C19:1和C21:5含量显著高于WM和LS.XB的DHA和n-3 PUFA含量显著高于LS.[结论]广西兴宾区、武鸣区和灵山县乌原鲤肌肉营养成分组成均衡,氨基酸和不饱和脂肪酸含量丰富,兴宾区乌原鲤肌肉氨基酸和脂肪酸含量和组成比例优于武鸣区和灵山县.
Quality Evaluation and Nutritional Composition Analysis of Muscle in Procypris merus
[Objective]The nutritional composition of muscle in Procypris merus was analyzed to provide a reference for healthy breeding and protection and utilization of germplasm resources of P.merus.[Method]P.merus were selected from Wuming District(WM),Lingshan County(LS)and Xingbin District(XB)of Guangxi to determine the nutritional composition of muscle and analyze the nutritional value.[Result]The crude protein and crude fat content in muscle of the 3 groups of P.merus were 18.68%-19.44% and 0.83%-1.21%,respectively,and the water and crude fat contents in LS group were significantly higher than WM and XB groups.16 kinds of amino acids were obtained in 3 groups of P.merus,among which the content of glutamic acid(Glu)was the highest,while the content of methionine(Met)was the lowest.The content of total amino acid(TAA),total essential amino acid(EAA),total non-essential amino acid(NEAA)and total delicious amino acid(DAA)of XB group were significantly higher than WM and LS groups.The first and second limiting amino acids of the 3 groups were Met+cystine(Cys)and valine(Val),respectively.Except Met and Val,the amino acid score(AAS)of other amino acids in 3 groups were all higher than 1,and the chemical score(CS)were all higher than 0.75,and the essential amino acid index(EAAI)were 78.54-86.32.A total of 29 kinds of fatty acids were detected in 3 groups of P.merus.The contents of C13:0,C15:0,C17:0,C19:1 and C21:5 of XB group were significantly higher than WM and LS groups.The contents of DHA and n-3 PUFA in XB group were significantly higher than LS group.[Conclusion]The nutrient composition of P.merus of Xingbin District,Wuming District and Lingshan County of Guangxi are balanced.The amino acid and unsaturated fatty acid content are abundant.The content and composition of amino acid and fatty acid in Xingbin District are higher than Wuming District and Lingshan County.
