白糖罂荔枝果皮钾、钙、镁含量的动态变化及其与着色的关系

以白糖罂荔枝(Litchi chinensis Sonn.‘Baitangying’)果皮为试验材料,探讨了果皮K、Ca、Mg含量的动态变化及其与着色的关系,结果表明,在果皮着色发育过程中,全K和水溶性K含量在总体上均呈下降趋势,全Ca、全Mg、水溶性Ca和水溶性Mg含量在总体上均呈上升趋势;叶绿素含量和h值呈显著下降趋势,花色素苷含量和a值呈显著上升趋势.果皮花色素苷含量与果皮全K、全Ca和水溶性K等含量分别呈负、正和负相关一元指数函数回归关系,果皮叶绿素含量与果皮全K、全Ca和水溶性K等含量分别呈正、负和正相关一元指数函数回归关系.
Relationships Between the Changes of the Contents of K, Ca and Mg in Pericarp of Baitangying Litchi and the Pericarp's Coloration
In the report, the pericarps of Baitangying litchi was used to analyze the relationship between the changes of the contents of K, Ca and Mg in pericarp and the pericarp' s coloration of Baitangying litchi (Litchi chinensis Sonn.cv Baitangying).The results showed that the contents of the total K and the water-soluble K decreased, the contents of the total Ca, the total Mg, the water-soluble Ca and the water-soluble Mg increased;the contents of chlorophyll and the h values decreased significantly, while the contents of anthocyanin and the a values increased significantly;the exponential regression equations of the content of anthocyanin to the contents of the total K, the total Ca and the water-soluble K were all significant, and the correlation indexes were negative, positive and negative, respectively.The exponential regression equations of the content of chlorophyll to the contents of the total K, the total Ca and the water-soluble K were all significant, and the correlation indexes were positive, negative and positive, respectively.
