Identification of Donkey-hide Gelatin and Donkey-bone Gelatin Based on Mineral Elements
OBJECTIVE This study was aimed to investigate the difference of mineral elements in donkey-hide gelatin(DHG)and donkey-bone gelatin(DBG)and found a special marker to identify them.METHODS The contents of eight mineral elements(Ca,P,Mg,Zn,Fe,Cu,Al and Sr)in DHG,DBG and mixed gelatin samples were analyzed by inductively coupled plasma mass spectrometry.Principal component analysis(PCA)and Mann-Whitney test were used to analyze the differences of mineral elements content between two kinds of gelatins.RESULTS Based on the PCA,DHG and DBG could be clearly distinguished.Six elements,including Ca,Cu,Sr,P,Mg and Fe,were the characteristic elements of two gelatins.The ratio of elemental P to elemental Cu content(P/Cu)in DBG and mixed gelatin was higher than DHG.CONCLUSION The P/Cu value can be used to identify the DHG and DBG.This study may provide new ideas and methods for the identification of impurities derived from donkey in DHG.
