Study on the dynamic process of pigments and Monacolin K production in Monascus by glycerol
Monascus pigments(MPs)and monacolink(MK)are the main secondary metabolites of Monascus spp.Studies found that the productions of MPs and MK in Monascus spp.could be promoted by glycerol,but its function mechanism was not clear.In this study,analyzed the effect of glycerol on the growth,MPs and MK production,glycerol utilization of Monascus spp.by using spectrophotometry,liquid chromatography and gas chromatography,etc.The results showed that the pH of fermentation broth decreased while the biomass increased after adding glycerol.In addition,MPs and MK production were promoted significantly(p<0.05).Moreover,when the glycerol concentration of the culture medium were 40 g/L and 160 g/L,the glycerol utilization rate increased with the fermentation time,and the utilization rate came to the highestat 12 d and 15 d.During fermentation process,glycerol mainly distributed outside the cell.The rate of glycerol in cell increased along with the fermentation time.These findings will provide theoretical reference and technical support for using glycerol to promote MPs and MK production in Monascus spp.
