渤海口虾蛄消化酶活性与酶学性质初步研究

探讨了渤海口虾蛄的消化酶活性及部分酶学性质.结果表明:口虾蛄的蛋白酶、淀粉酶和脂肪酶活性均以肝胰腺最高,胃最低;口虾蛄胃的蛋白酶、淀粉酶和脂肪酶的最适 pH 均为 6,肝胰腺和肠道淀粉酶和脂肪酶的最适 pH 均为 7,肝胰腺和肠道蛋白酶的最适 pH 均为 8;口虾蛄肝胰腺淀粉酶最适温度为 30℃,胃的蛋白酶和淀粉酶及肠道淀粉酶的最适温度均为 35℃,胃脂肪酶、肝胰腺蛋白酶和脂肪酶及肠道蛋白酶和脂肪酶的最适温度均为 40℃.
Preliminary study on digestive enzyme activity and enzymatic properties of Oratosquilla oratoria in the Bohai sea
The digestive enzyme activity and some enzymatic properties of Oratosquilla oratoria in the Bohai sea were explored.The results showed that the activities of protease,amylase and lipase in hep-atopancreas from O.oratoria were highest,and lowest in the stomach;The optimum pH value for protease,amylase and lipase activities in the stomach of O.oratoria was 6,the optimum pH value for amylase and lipase activities in hepatopancreas and intestines was 7,and the optimum pH value for protease activity in hepatopancreas and intestines was 8;The optimum temperature of amylase in the hepatopancreas of O.oratoria was 30℃,the optimum temperature of protease and amylase in stom-ach and amylase in intestines was 35℃,and the optimum temperature of lipase in stomach and prote-ase and lipase in hepatopancreas and intestines was 40℃.
