Optimize the process conditions for ultrasonic assisted enzymatic extraction of vespa mandarinia nidus polysaccharides(VMNP)from vespa mandarinia nidus,and analyze their antioxidant properties,providing a reference for the development and utilization of VMNP.On the basis of single factor experiments to investigate the effects of liquid-solid ratio,ultrasonic temperature,ultrasonic time,and cellulase dosage on the extraction amount of VMNP,response surface methodology was used to optimize the extraction conditions of VMNP;With vitamin C as the control,the antioxidant activity of VMNP was investigated by measuring the scavenging rate of VMNP on DPPH radical(DPPH·)and hydroxyl radical(·OH).The results showed that the optimal conditions for ultrasonic assisted enzymatic extraction of VMNP were as follows:liquid-solid ratio 43:1(mL/g),ultrasonic temperature 46℃,ultrasonic time 47 min,cellulase dosage 4.10%,under these conditions,the extraction amount of VMNP was(31.86±0.08)mg/g;When the mass concentration of VMNP solution was 0.03140 mg/mL,the clearance rates of DPPH·and·OH reached 80.26%and 69.38%of vitamin C at the same concentration,respectively.The ultrasonic assisted enzymatic method can effectively extract VMNP,which has certain antioxidant properties and can be developed and utilized as an antioxidant.
