研究以食盐和益生菌(灭活型)为主要原料,开发了一种新型的益生菌漱口盐.结合抑菌功能研究和感官评价,确定了产品配方;通过对其主要指标的研究,确定了产品特征指标的检测方法;最后通过产品稳定性研究,在温度37~38℃、相对湿度70%~80%条件下,进行了为期90d的主要指标监测,从而确定了产品的保质期.结果表明:益生菌漱口盐对牙龈卟啉单胞菌有较强的抑菌作用(>99%),产品的保质期为2 a.
Abstract
In this study,a new probiotic gargle salt was developed using edible salt and pro-biotics(inactivated type)as main raw materials.The formulation of the product was determined based on the study of bacteriostasis function and sensory evaluation.The test method of product characteristic index is determined by studying its main index.Finally,through the product stability study,on conditions that the temperature 37~38 ℃,relative humidity 70%~80%,monitoring main index change lasts for 90 days,so as to determine the shelf life of the product.The results showed that the probiotic gargle salt had strong bacteriostasis functions on Porphyromonas gingiva-lis(>99%).The shelflife of the product is 2 years.
