Application of nucleic acid aptamers in aquatic food safety testing
Food safety is a major issue related to public health,such as food-borne pathogenic microbial contamina-tion,toxin production,antibiotic abuse,overuse of food additives,heavy metal ion contamination,pesticide and veterinary drug residues,and illegal addition of harmful substances.Therefore,rapid,sensitive and reliable detec-tion of harmful substances in food is of great significance for the prevention and control of food safety.Nucleic acid aptamers,a kind of single-stranded nucleic acid that can bind to the target with high affinity and high specificity,can effectively recognize harmful substances in food,and play an important role in the development and application of new food safety detection technologies.The article describes in detail the monitoring mechanism of aptamers and aptamer sensors,and describes the function of aptamers in the detection of antibiotics,pesticide residues and other substances,and looks forward to the development of aptamer sensors in the hope of providing a certain reference value for the analysis of aquatic food safety and the development of aptamer research.
