Contamination and risk assessment of deoxynivalenol and its derivatives in 182 wheat flour and its products in Zhumadian of Henan,2016-2022
Objective To analyze the contamination levels of deoxynivalenol(DON)and its derivatives in wheat flour and its products,and assess the dietary exposure risk.Methods A total of 182 wheat flour and its products were collected across Zhuma-dian from 2016-2022.The contents of DON,3-acetyl-deoxynivalenol(3-AC-DON)and 15-acetyl-deoxynivalenol(15-AC-DON)were determined by isotope dilution-ultra performance liquid chromatogram tandem mass spectrometry.The contamina-tion levels of DON and its derivatives were analyzed,and the dietary exposure risk was assessed in combination with the dietary consumption of adults.Results The overall detection rate of DON is 87.4%in wheat flour and its products.The detection rate was 96.4% in dry noodles,92.0% in wheat flour,86.2% in steamed bread,and 78.3% in wet noodles.The exceeding-standard rate was 10.9% in wet noodles,8.6% in steamed buns,7.1% in dry noodles,and 4.0%in wheat flour.The risk assessment showed:for adult males,the chronic exposure risk ranged from 0.4-0.9 μg/(kg·bw),and the acute exposure risk ranged from 3.9-9.6 pg/(kg·bw);for adult females,the chronic exposure risk ranged from 0.5-1.1 µg/(kg·bw),and the acute exposure risk ranged from 4.6-11.3 μg/(kg·bw).Conclusions The contamination of DON are common in wheat flour and its products across the city;wet noodles have the high risk of DON dietary exposure;under the same conditions,the exposure risk of adult women is higher than that of adult men.The whole process of DON contamination from wheat on the farm to dining table should be kept paying attention to for reducing the risk of dietary exposure.
