Effects of Different Packaging Methods on the Storage Quality of Coated Peanut
The coated peanuts were packaged in 8 kinds of packaging methods,and the oxidation was accelerated by the Schaal oven method.The sensory evaluation,peroxide value,acid value and TBA were carried out every 2 days to analyze the changes in storage quality of coated peanut.The results showed that the deterioration of coated peanut could be slowed down to some extent by 8 packaging methods.The storage effect of opaque aluminum foil bag+ deoxidizer package was the best,and that of translucent aluminum foil bag+deoxidizer package was the second,and there was no significant difference between the two(p>0.05)The packaging effect of PET transparent can was the worst.Considering the storage effect,light transmittance and packaging cost,semi-transparent aluminum foil bag+deoxidizer packaging is the suitable packaging method for coated peanut products.
