Persimmon has a long cultivating history and distribute widely in China. The varieties of persimmon were divided into four categories in horticulture. Persimmon is not only rich in nutrient that contains a mass of saccharide and multiplex vitamin, but also has high medicinal and economic value, which is one of the moat important economic tree varieties to help farmers casting off" poverty to get rich in mountainous area. The main values of each components of persimmon were introduced, and the developmental prospects of each components of persimmon were analyzed. In the end, the techniques that keeping persimmon to be fresh were introduced and prospected.
