60Co-γ辐照处理对安化红茶品质的影响

为提高湖南安化红茶的品质,研究用60Co-γ不同辐照剂量处理对提高安化红茶品质的效果。结果表明:60Co-γ辐照处理可改善安化红茶品质,辐照剂量在0~4 kGy时,安化红茶中茶黄素和茶氨酸的含量增加显著;辐照剂量在0~10 kGy时,茶红素含量先降低后升高,茶红素/茶黄素(TRS /TFS)的比值先增高后降低;辐照剂量在10 kGy以下时,辐照处理对安化红茶中茶多酚、游离氨基酸、生物碱及水浸出物总量没有明显影响。
Effect of 60Co-γIrradiation Treatment on Quality of Anhua Black Tea
To improve the quality of Anhua black tea in Hunan province, the effect of 60Co-γ irradiation treatment on quality of Anhua black tea was studied, in which the contents of main chemical components of Anhua black tea irradiated by different irradiation doses were measured. The results showed that Anhua black tea quality can be improved by gamma irradiation treatment;the contents of thealfavins and theanine in Anhua black tea increased signiifcantly when irradiation dose was within 0~4 kGy;when irradiation dose was within 0~10 kGy, the content of thearubigins decreased ifrst and then increased and the TRS/TFS increased ifrst and then decreased;moreover, the contents of tea polyphenols, amino acids, alkaloid and the total extracts of Anhua black tea had no signiifcant influences by irradiation treatment.
