不同桃品种幼果炮制瘪桃干的抗氧化活性与药用适宜性研究

研究不同桃品种幼果炮制瘪桃干的绿原酸类化合物含量和抗氧化活性,为综合开发利用桃幼果提供参考。以 33份桃品种幼果为试材,采用 60℃烘干(HAD60)、冷冻干燥(FD)和日光干燥(SD)炮制瘪桃干,通过测定瘪桃干样品DPPH自由基清除能力、总抗氧化能力和总酚、新绿原酸(5-CQA)、绿原酸(3-CQA)和隐绿原酸(4-CQA)含量评价不同品种桃幼果的抗氧化活性和药用适宜性。结果表明:同一品种 3 种炮制方式总酚含量、DPPH自由基清除能力和总抗氧化能力大小顺序均为FD>HAD60>SD;SD处理瘪桃干样品总酚含量(用没食子酸当量表示,GE)、DPPH自由基清除能力(用Trolox 当量表示,TE)和总抗氧化能力变异范围分别为2。96~19。54 mg/g、2。11~9。13 mg/g和24。83~108。96 mmol/kg;3种炮制方式制备的样品中5-CQA、3-CQA和4-CQA含量顺序均为FD>HAD60>SD;SD处理瘪桃干样品的5-CQA、3-QCA和4-QCA变异范围分别为 0。27~6。23、0。38~3。75 和 0。14~1。69 mg/g;5-CQA、3-CQA和 4-CQA含量均与抗氧化指标呈极显著正相关(P<0。01),其中5-CQA与与抗氧化指标的相关性最强;33份供试品种幼果适合炮制瘪桃干的有25份,其中毛桃17份,油桃6份,观赏桃2份;桃幼果药用适宜性最好的品种分别为锦春、锦花和中桃11号,部分特异油桃(188、中油20号和春蜜)和观赏桃(红叶桃和北京S9)因幼果富含绿原酸类化合物而较适合炮制成瘪桃干。
Study on Antioxidant Activity and Medicinal Suitability of Dried Peach Processed from Unripe Peaches of Different Varieties
This study aims to provide a reference for comprehensively developing and utilizing unripe peaches by analyzing the content of chlorogenic acids and their antioxidant activities of dried peach processed from unripe peaches of different varieties.The unripe peaches of 33 varieties were used as experimental materials.Different dried peaches were prepared by drying at 60℃(HAD60),freeze-drying(FD),and sun drying(SD).The antioxidant activity and medicinal suitability of unripe peaches of different varieties were evaluated by measuring DPPH radical scavenging ability,total antioxidant capacity,and the contents of total phenol,neochlorogenic acid(5-CQA),chlorogenic acid(3-CQA),and cryptochlorogenic acid(4-CQA)of the dried peach samples.The test results showed that the three processing methods in descending order were FD>HAD60>SD in terms of the total phenol content,DPPH radical scavenging ability,and total antioxidant ability of the same variety.The variation ranges of total phenol content(gallic acid equivalent,GE),DPPH radical scavenging ability(Trolox equivalent,TE),and total antioxidant ability of dried peach samples treated with SD were 2.96-19.54 mg/g,2.11-9.13 mg/g,and 24.83-108.96 mmol/kg,respectively.The three processing methods in descending order were FD>HAD60>SD in terms of the contents of 5-CQA,3-CQA,and 4-CQA.The variation ranges of 5-CQA,3-QCA,and 4-QCA in dried peach samples treated with SD were 0.27-6.23,0.38-3.75,and 0.14-1.69 mg/g,respectively.The contents of 5-CQA,3-CQA,and 4-CQA were significantly positively correlated with antioxidant indexes(P<0.01),with the strongest correlation of 5-CQA.Among the unripe peaches of 33 varieties tested,25 were suitable for dried peach processing,including 17 wild peaches,six nectarines,and two ornamental peaches.The varieties with the best medicinal suitability are'Jinchun','Jinhua',and'Zhongtao 11',and some special nectarines('188','CN 20',and'Chunmi')and ornamental peaches('Hongyetao'and'Beijing S9')are suitable for dried peach processing due to the high content of chlorogenic acids in unripe peaches.
