Oryzanol Clears Sodium Nitrite and Blocks the Synthesis of Nitrosamine in Simulated Gastric Fluid
To reduce the content of nitrosamines in the human body,this study employed liquid chromatography-mass spectrometry to explore the performance of oryzanol in clearing sodium nitrite and blocking the synthesis of nitrosamine in simulated gastric fluid.The results showed that in simulated gastric fluid,oryzanol cleared sodium nitrite,and the removal rate was in a positive correlation with the oryzanol addition amount.Adding oryzanol in the diet reduced the content of N-nitroso-N-ethylaniline,N-nitroso-diethylamine,and N-nitroso-pyrrolidine,with the blocking rates of 100%,100%,and 24.4%,respectively.In simulated gastric fluid,oryzanol can reduce the substrate of endogenous nitrosamine synthesis by reducing the content of sodium nitrite,thus blocking the synthesis of nitrosamine.
