For efficient extraction of polysaccharide from M.kwangsiensis(Magnolia kwangsiensis Figlar & Noot.),it is important to explore the optimal process for the best extraction, which can provide a reference for the efficient development of polysaccharide for applications in the food, pharmaceutical, cosmetic, and other industries.Ultrasonic assisted extraction was used to extract the polysaccharide. The optimal process conditions were determined through single factor tests and response surface tests.Based on Fick's second law,the extraction kinetic model was established.Antioxidant effect and stability of polysaccharide from M.kwangsiensis were studied. The results show that the polysaccharide yield rate is 3.68%at ultrasonic power 300 W and 60 ℃ for 60 min with material-liquid ratio 1∶40 g/mL.Based on the polysaccharide extraction kinetics model, the extraction rate constant, relative raffinate, and half-life are calculated. The total antioxidant activity of polysaccharide from M.kwangsiensis is weaker than that of Vc(ascorbic acid),and the ρIC50(50%inhibiting mass concentration)for·OH(hydroxyl radical)scavenging is 0.40 mg/mL.The polysaccharide from M.kwangsiensis can be used or stored with appropriate amount of sodium benzoate, and not be shared with citric acid and sodium chloride. The polysaccharide from M.kwangsiensis is expected to be developed as functional foods and natural medicines.
