Molecular structure and activity of astaxanthin,its distribution and applications in aquatic organisms
Astaxanthin,an oxygenated derivative of carotenoids,exhibits a bright red color.It has the ability to quench singlet oxygen,scavenge free radicals,and prevent or block chain reactions initiated by singlet oxygen and free radicals.Recognized as the most potent antioxidant among edible substances in nature,astaxanthin holds im-mense potential for development and application in various sectors,including cosmetics,aquaculture,food,nutri-tion,health care,and pharmaceuticals.This paper reviews the unique chemical molecular structure of astaxanthin and its different types of optical and geometric isomers and elaborates on the structural characteristics,composition,and primary functional mechanisms of astaxanthin.It also discusses the similarities and differences in its biological activities and effects.Furthermore,it analyzes and forecasts the distribution of astaxanthin in aquatic organisms and its applications in aquaculture,with the aim of promoting the healthy growth of the aquaculture industry.
