荷叶黄酮纳米粒子的制备及其抗氧化稳定性研究

对荷叶中黄酮的提取工艺进行了优化,并利用改性大米蛋白负载荷叶黄酮,对负载条件及负载后的纳米粒子抗氧化性进行了研究.结果表明:纳米粒子的制备条件为pH=7.0 且蛋白:黄酮为 20:7;荷叶提取物及其纳米粒子具有一定的抗氧化能力;纳米粒子具有较好的抗氧化稳定性,能够有效保护荷叶黄酮的活性,对荷叶提取物活性的保护具有一定的控制作用.
Preparation and Antioxidant Stability of Lotus Leaf Flavonoids Nanoparticles
The extraction process of flavonoids from lotus leaves was optimized,the loading conditions and the antioxidant activity of nanoparticles were studied by using modified rice protein to load flavonoids from lotus leaves.The results showed that:the preparation conditions of the nanoparticles were pH=7.0 and the protein:polysaccharide:flavonoid was 20:7.Lotus leaf extract and its nanoparticles have certain antioxidant capacity.Nanoparticles have good antioxidant stability,can effectively protect the activity of flavonoids in lotus leaf,and have a certain control effect on the protection of activity of lotus leaf extract.
