Gluten tester is an instrument to determine gluten content,gluten index and water retention in wheat flour or whole wheat flour,which is widely used in grain purchase and sale,grain storage,grain and oil scientific research institutions,food production and other fields.According to its metrological characteristics,a calibration method is proposed in this paper and verified by experiment.The results show that the method not only solves the problem of traceability,but also ensures the accuracy and reliability of the quantity value,not only protects the rights and inter-ests of consumers,grain purchasing and marketing,but also provides technical support for the measurement supervi-sion in the field of grain.
