摘要
大球盖菇(Stropharia rugoso-annulata)作为一种药食两用的食用菌,近年来在我国栽培面积不断扩大.文章综述了大球盖菇丰富的营养成分和生物活性物质,如多糖、蛋白质、氨基酸等,并探讨了这些成分对人体健康的促进作用.此外,文章还详细阐述了大球盖菇的栽培技术、加工工艺以及在食品、医药以及环境生态等领域的应用潜力.
Abstract
Stropharia rugoso-annulata,a dual-purpose edible mushroom with both medicinal and nutritional value,has seen a significant increase in cultivation in China in recent years.The abundant nutritional components and bioactive substances in S.rugoso-annulata were summarized in this review,such as polysaccharides,proteins,and amino acids,and discusses their potential health benefits.Additionally,the article elaborated on the cultivation techniques,processing methods,and application prospects in food,medicine,and environmental ecology of S.rugoso-annulata.
