Nutritional Composition Analysis and Quality Evaluation of Muscle of Semilabeo obscurus
In this study,the muscle nutrients and muscle quality of Semilabeo obscurus from 3 different regions of Guangxi(LS,XB,WM)were compared and analyzed.The results showed that the crude protein and crude fat contents of fish in the three groups were 17.52%~19.76%and 0.86%~1.80%,respectively.The crude protein and crude fat contents of LS group were significantly higher than those of XB group,and the total sugar content of LS group was significantly lower than that of XB and WM groups.Among the 8 detected mineral elements,the content of major element P was the highest,followed by the content of Ca and Mg,and the contents of 5 trace elements were Fe>Zn>Cu>Se>Mn.The Cu content of XB group was significantly higher than that of LS and WM groups.In 17 kinds of detected amino acids,Glu content was the highest,followed by Asp and Lys.Except for Cys,in the contents of other amino acids,EAA/TAA and EAA/NEAA of LS and WM were significantly higher than those of XB,while DAA/TAA was significantly lower than XB.The ratios of EAA/TAA and EAA/NEAA in the three groups ranged from 37.61%to 38.39%and 70.83%to 72.90%,respectively,which was close to the ideal protein pattern required by FAO/WHO.More than 25 kinds of fatty acids were detected in the three fish groups,The contents of unsaturated fatty acids were 48.77%~50.92%,and the contents of ALA,EPA and PUFA in LS were significantly higher than those in XB and WM.In conclusion,the muscle of Semilabeo obscurus is rich in nutrition,good quality,has good food value and health care,and can be bred and promoted as a high-quality economic fish.
