Analysis of Nutrient Composition and Fuzzy Comprehensive Evaluation of Raspberry Fruit
In the paper,35 nutrients in 7 varieties of raspberry fruits planted in Pingnan County,Fujian Province were compared and analyzed,and the fruit quality was systematically and comprehensively evaluated by entropy weight method and fuzzy comprehensive evaluation method.The results showed that 21 amino acid types,including 8 essential amino acids,were present in the raspberries.The ratio of essential amino acids to total amino acids ranged from 24.78%to 30.90%,with the average of 29.02%,while the ratio of essential amino acids to non-essential amino acids ranged from 32.95%to 44.72%,with the average of 40.98%.Protein content level is below the ideal protein standard of WHO and FAO.The average proportion of flavor amino acids from the highest to the lowest was bitter,umami and sweet amino acids.Additionally,medicinal amino acids accounted for an average of 52.25%of the total.Among the amino acid scores,leucine had the lowest score value and was the first limiting amino acid for all varieties.The essential amino acid index ranged from 49.25 to 73.28.The varieties were ranked from the highest to the lowest as follows:Ziyou,Liulin,RubuschingiiHu,Xiannu,Heizuanqiuyun,Ninsi,and Heizuanqiuxuan.The fuzzy comprehensive evaluation outcomes revealed that the"excellent"rating belonged to Heizuanqiuyun,while Ninsi,Xiannu,and RubuschingiiHu secured"good"grades.Heizuanqiuxuan and Ziyou were awarded"medium"grades,whereas Liulin received a"poor"rating.In summary,raspberry fruits boast a comprehensive amino acid profile and significant edible as well as medicinal value.These evaluation results can provide a theoretical basis for the screening,development and utilization of raspberry products in the mountainous areas of east Fujian Province.
