摘要

《食品营养学》是高等职业院校医学营养、食品检验检测技术、烹饪工艺与营养、旅游管理、食品质量与安全等专业的核心课程之一.笔者基于课程特点和教学过程中存在的问题,引入成果导向教学(outcome-based education,OBE)理念探索育人新思路,从学习目标、需求、过程、评价等多角度,深化课程改革,重构课程内容,探究OBE理念对课程教学的思考与启示,以期在知识、技能、能力和素养四个维度上得到有效提升,进而提高教学水平和教学质量,为相关院校深化课程教育教学改革提供新的参考.

Abstract

Food Nutrition is one of the core courses of medical nutrition,cooking technology and nutrition,food quality and safety,food inspection and detection technology,tourism management and other majors in higher vocational colleges.Based on the characteristics of the curriculum and the problems existing in the teaching process,the author introduces the concept of outcome-based education(OBE)to explore new ideas for educating students.From the perspectives of learning objectives,needs,processes,evaluation and other aspects,the author deepens the curriculum reform,reconstructs the curriculum content,and explores the thinking and enlightenment of OBE concept on curriculum teaching.In order to effectively improve the four dimensions of knowledge,skill,ability and accomplishment,and then improve the teaching level and teaching quality,so as to provide a new reference for relevant colleges to deepen the reform of curriculum education and teaching.
