Research progress on the application of plant polysacch arides in artificial meat products
Artificial meat is a new type of meat made by artificial means,which has the characteristics of wide applicability,high nutritional value and environmental sustainability,and can meet the growing nutritional demand for protein.In this revciew the current research status of artificial meat and the types of polysaccharides used to improve the qualities of artificial meat are comprehensively described,the research progress of polysaccharides in improving the functional quality of artificial meat from three aspects of nutrition,palatability and appearance are listed,and finally the prospect of the application of polysaccharides in artificial meat products are indicated.Finally,conclusion remarks related to artificial of meat production aswell as personal opinion of author on the prospects of artificial meatlproduction are declared.
