摘要
在卷烟加工中,作为烟用香精的美拉德反应产物可增加卷烟香气,提升卷烟质量.本文简述了美拉德反应的机理、影响因素以及在卷烟增香中的应用研究进展,并对今后美拉德反应在卷烟增香中的研究提出展望.
Abstract
In cigarette processing,Maillard reactants,as a tobacco flavor,can increase the aroma of cigarettes and improve the quality of cigarettes.This paper briefly reviews the Maillard reaction mechanism,influencing factors and application in cigarette flavoring,and proposes the future research prospects of Maillard reaction in cigarette flavoring.
