On the basis of single factor experiment,L9(34)orthogonal test was used to study the effects of extrac-tion temperature,ethanol concentration,solid-liquid ratio and extraction times on the extraction rate of total fla-vonoids from lentils in pre-and post-germination.On the basis of optimizing the extraction process of total flavonoids in lentils,the content changes of flavonoids in lentils at pre-and post-germination stage were compared.The results showed that the optimumextraction temperature 85℃,ethanol volume fraction 60%,material to liquid ratio 1∶60(g/ml),refluxing extraction for twice with 8h every time;the optimum extraction process parameters after germina-tion were as follows:extraction temperature 90℃,ethanol volume fraction 60%,material to liquid ratio 1∶20(g/ml),refluxing extraction for twice with 8h every time.Under the optimum conditions,the average content of total flavonoids in lentils was 10.452 mg/g before germination and 8.518 mg/g after germination.The extraction method is simple,stable and reproducible.In this experiment,the content of total flavonoids in lentils at pre-and post-ger-mination stage was determined for the first time,which provided a basis for its deep processing.
