Analysis of Volatile Components in Aronia Melanocarpa Flavor Liquor
The volatile components of Aronia melanocarpa fruit liquor were analyzed.The volatile components in the samples were extracted by liquid-liquid extraction with ether-pentane(volume ratio 1∶1)as the extraction solvent,and the volatile components were analyzed by GC-MS.Twenty-nine kinds of volatile components were detected in sample 1,including ten kinds of esters,eight kinds of alcohols and four kinds of acids.Thirty-four kinds of volatile components were detected in sample 2,including seventeen kinds of esters,five kinds of alcohols and six kinds of acids.Twenty-six kinds of volatile components were detected in sample 3,including ten kinds of esters,five kinds of alcohols and eight kinds of acids.The volatile components of three kinds of Aronia melanocarpa fruit liquor produced by different fermentation processes were different.
