Research progress on anthocyanins regulating oxidative stress
Oxidative stress refers to the imbalance between the generation of reactive oxygen species in the body in response to various risk factors and the antioxidant defense mechanisms,leading to tissue damage and the onset of related diseases.Anthocyanins,with multiple biological effects,have the ability to enhance the antioxidant capacity of various animal tissues,organs,and cells,alleviating damage caused by oxidative stress.As a result,anthocyanins have gained increasing attention.The article provides an overview of the structure,physicochemical properties,and biological activities of anthocyanins.It also introduces the research progress on the role of anthocyanins in alleviating oxidative stress in livestock and poultry production.The aim is to provide a reference for the application of anthocyanins as natural immune enhancers and antioxidants.
