Analysis of Quality Differences and Influencing Factors of Zanthoxylum bungeanum Maxim.with Different Germplasm Resources
The quality of Zanthoxylum bungeanum Maxim.is mainly influenced by factors such as variety,tree age,cultivation environment,harvesting method,and processing process.To clarify the quality differences of Zan-thoxylum bungeanum Maxim.among different germplasm resources and identify the key environmental factors that affect the differential shapes,this study measured the color,particle weight,numbness intensity,and volatile oil content of 72 germplasm resources of Sichuan pepper.At the same time,representative Sichuan pepper germ-plasm resources such as bamboo leaf Zanthoxylum bungeanum Maxim.ZA,"northern pepper"ZB1,and"southern pepper"ZB2 were selected.Chemical stoichiometry was used to conduct in-depth analysis of the indicators,in or-der to clarify the key factors affecting the quality traits and differences of Zanthoxylum bungeanum Maxim.in different germplasm resources.The results indicate that:① The quality traits of Sichuan pepper vary among dif-ferent germplasm resources.There were significant differences in color indicators,thousand grain weight,and vol-atile oil content among different germplasm resources of Zanthoxylum bungeanum Maxim.,while there was no significant difference in taste intensity among different germplasm resources of Zanthoxylum bungeanum Maxim..② Different environmental conditions have different impacts on the quality of various quality resources of Zan-thoxylum bungeanum Maxim..Specifically,the volatile oil content and sesame flavor intensity of the fruit peel of ZA variety are significantly affected by air humidity,while the color,weight,and sesame flavor of the fruit peel of ZB1 variety are mainly influenced by average temperature and geographic longitude.The fruit peel quality of ZB2 variety is mainly affected by the available potassium content in the soil,relative air pressure,and geographical lat-itude.
